A Healthy Choice: Delicious Anti-Inflammatory Coconut and Sweet Potato Muffins with Cinnamon, Ginger, and Maple Syrup!

But, there is even MORE to love about these muffins since they are FULL of anti-inflammatory and antioxidant agents!

Health benefits of sweet potatoes

The flesh of sweet potatoes contains high amounts of beta-carotene that can fight dangerous free radicals found in the body.

In addition, free radicals affect the DNA makeup of the cells and can result in mutations.

These cell mutations contribute to various cancer types.

However, sweet potatoes are rich in anti-inflammatory nutrients that fight against chronic and acute inflammation.

If not treated, inflammation can trigger multiple chronic diseases and health issues.

Flourless sweet potato muffin recipe


- 1 small organic roasted sweet potato, or 1 cup, packed

- ¾ cup of organic canned coconut milk

- 3 organic lightly beaten free range eggs

- Half a cup of pure organic maple syrup

- 2 tbsp. of organic olive oil

- ¼ cup of organic coconut flour

- 1 cup of organic brown rice flour

- Half a tsp. of pink Himalayan salt

- 1 tsp. of ground ginger

- 1 tbsp. of baking powder

- ⅛ tsp. of ground nutmeg

- 1 tbsp. of ground cinnamon

- ⅛ tsp. of ground cloves


First of all, preheat the oven to 400 degrees Fahrenheit and oil a 12-hole muffin tray.

Afterwards, poke holes in the sweet potato and place on middle rack, cook for an hour or so.

Then, remove the sweet potato from oven and leave it cool.

After that, just scoop the sweet potato from the skin and place it in a mixing bowl.

You can eat its skin as a snack since it consists of the same vitamins as the insides!

You should add the almond milk, olive oil, and maple syrup to the sweet potato and combine until it is smooth.

Mix the dry ingredients together in a separate bowl.

Next, you should pour the dry ingredients into the sweet potato, combine until well mixed, pour the batter in the muffin pan and fill each tin until ⅔ full.

You should cook it in the oven on the middle rack for about 30-35 minutes. You can also check if they are cooked when an inserted knife in the middle of the muffin comes out clean.

Your delicious muffins are now ready!
