- 1 tsp. of Jerk or Cajun seasoning

- 1 bay leaf

- 1 tsp. of coconut oil

- 1/4 tsp. of salt


First of all, you should gather all the ingredients and an oven safe pot with a lid. Dutch oven is recommended for this.

The second thing you should do is to pour in the coconut milk and oil, garlic, jerk or Cajun seasoning and bay leaves. Then, bring to a simmer, but over medium heat.

After that, you should add the rice, chicken stock, as well as salt. Next, you should cover it, boil and simmer it for 15 to 20 minutes, i.e., until the rice has absorbed all the liquid.

At least, fold in beans and remove the bay leaf.
